About our Organic Cookies

Back in 1877, a culinary icon was born in the Basque region of Spain - Maria Manuela Eugenia Carolina Mestayer Jaquet, known as the “Marquesa de Parabere.”
  
Daughter to a french diplomat and granddaughter to a wealthy banker, she wasn’t expected to make her own mark. And while she had servants, butlers and cooks at her beck and calling, her love of cooking and baking drove her to be a restaurateur.

A restless and unconventional woman, she opened two fine restaurants, where aristocrats, politicians and diplomats were frequently seen. She authored two major culinary encyclopedias acclaimed as “kitchen pearls” in Europe and throughout the world.  Fortunately enough, we inherited a 1933 edition which has been carefully preserved in our family.  

We have delicately adapted one of the Marquesa’s recipes to bring you an up-to-date, organic version of a timeless classic to please today’s palates, young and young at heart.
